Gingerbread Parkin





If you are looking for something totally and utterly delicious yet ridiculously easy to whip up for morning or afternoon tea, or even for dessert then this is the recipe for you. I have had this recipe for so long now I have long forgotten where it came from. I have used it to have with a cuppa or for dessert with custard. It's lovely on it's own and even nicer with some butter. It really is that versatile. It has a really good gingery flavour without being overpowering and has a lovely tender texture. You can have this in the oven in 5-10 minutes it's that easy to make and all you need is a pot. This afternoon after being at the park with the boys and the dog, we came home ready for a nice afternoon tea. I quickly made this and within 40 or so mins the boys were sitting down with hot chocolates and a slice of this. Give it a go...you won't be disappointed!


Gingerbread Parkin


125 g each of butter, treacle and brown sugar.


Melt in a pot. 


Then add a lightly beaten egg followed by 175g flour, 2tsp ginger, 1 tsp cinnamon and a pinch of salt.


Finally add in 150ml milk heated to body temperature with 1 tsp baking soda added to it. 


Mix well and bake at 180 C for about 25 mins.


Try your hardest to stay away from it..or if you can't enjoy on it's own, with some butter or for pudding with some warm custard. YUM!!!
